Recipe of the week: Watch Eat Your Greens chef Jade make her easy Burmese-style tofu

Jade is the mastermind behind the restaurant's organic, largely plant-based menu and she's changing the way Leeds diners think about food.
She said: "The recipe sets yellow pea flour into a tofu-like consistency, it's extremely easy to do and only takes 30 minutes.

Hide Ad"This recipe is gluten free and vegan and once you know how to make it you’ll say goodbye to boring packet tofu.
"We used Hodmedods Yellow Pea Flour as it’s a British supplier, it's organic and plastic-free.
"The seasonings we choose are Happy Eating House chilli oil and Seagrown of Scarborough seaweed seasoning, but you can use whatever you fancy."

Here's the full recipe:
Ingredients
3 cups water (separated)
1 packed cup of yellow pea flour (or gram flour/besan)
2 tablespoons of your favourite seasoning
1 teaspoon of salt

Hide Ad1. Grease a baking tray to set your tofu in. Heat two cups of water in a thick large pan.
2. Stir the remaining cup of water with the flour and whisk until it’s a smooth batter and add in your seasoning.
3. Once the pan starts to simmer, pour the batter slowly into the pan, continuously whisking.
4. Keep stirring and turn the heat down slightly. Your batter should reach a thick and resistant consistency.

Hide Ad5. Pour it into a mould and wait for it to cool before refrigerating.
6. Once set, you can slice it, fry it, curry it, put it in a sandwich or cover it with sauce. Enjoy!
